How to Make Strudel with Hand-Stretched Dough

If you’ve ever eaten apple strudel at a restaurant, chances are the flaky pastry shell was built with multiple layers of phyllo dough. But if you know someone who loves to bake and perhaps has a bit of Northern European heritage, you might have been treated to a strudel made with hand-stretched dough. While the technique is not hard, it’s best learned by sharing, person-to-person. In this hands-on cooking class, participants will make, stretch and flip the dough around two kinds of filling (apple and sweet cheese). Be sure to wear comfortable shoes (dough stretching is best done standing), and please bring an apron. The strudels will be shared during class and divided among participants to take home
